Chop the leek, removing the root and cutting it into half-moon slices about 3/8 of an inch thick. Rinse in water to remove debris.

Once softened, add 2 tablespoons of all-purpose flour to the onions and stir to coat. Cook for 1-2 minutes.

Add 1 teaspoon of minced garlic, a shot of bourbon, and 1/2 cup of Marsala wine. Stir and cook off the alcohol.

Increase the heat to high and add 2 cups of beef broth and the entire container of chicken stock.

Add a bundle of thyme and 2 bay leaves to the pot, along with 1 tablespoon of Worcestershire sauce. Cover and let boil for 30-60 minutes.

After boiling, taste and adjust seasoning if necessary. Remove the thyme and bay leaves.

Prepare the bread by cutting off the tops and hollowing them out to create bowls. Brush the insides and outsides with olive oil.

Toast the bread in an air fryer for a few minutes until crispy.

Grate gruyere cheese using a box grater after placing it in the freezer for 5 minutes to firm it up.
