Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and grated ginger, cooking until fragrant, about 1-2 minutes.
Add chicken pieces to the pot, browning on all sides for about 5-7 minutes.
Pour in water, scraping up any browned bits from the bottom of the pot.
Add chopped green papaya, spinach or malunggay leaves, and seasoning ingredients.
Bring to a boil, then reduce heat to low and simmer until chicken is cooked through and flavors meld.
