Cultural Context

Chili is a staple of American cuisine, particularly in the southwestern United States. It is often associated with gatherings and events such as cook-offs and tailgating. The dish has many regional variations, with some versions including additional ingredients like corn or peppers. Its origins can be traced back to the 19th century, with influences from Mexican cuisine and Texan adaptations.

1

Drizzle sunflower oil in a big pot over medium heat.

2

Add chopped onions and season with salt and pepper.

3

Add minced garlic and cook until onions have a little color.

4

Add chopped peppers and jalapeno, seasoning with salt and pepper, and sauté.

5

Push the peppers to the side and add ground beef, breaking it into small pieces as it cooks.

6

Once the beef is cooked, add in one can of San Marzano whole tomatoes, crushing them by hand into the pot, including the juice.

7

If needed, open the second can of tomatoes and add them to the pot, mixing well.

8

Rinse and drain kidney beans and black beans, then add them to the pot.

9

Cook the chili on medium to low heat, optionally covering with a lid slightly ajar to let steam escape.

10

Let the chili cook for 2 to 3 hours for better flavor, or at least 1 hour if short on time.

11

If the chili is too thick, add a little bit of water or chicken stock.

12

Serve the chili in a bowl and top with grated sharp cheddar cheese, sliced green onions, cilantro, and crushed saltine crackers.
