1 chipotle pepper in adobo sauce
2 tablespoons adobo sauce
4 heaping tablespoons cornstarch
4 tablespoons cold water
2 cans pinto beans (15 ounces each)

Preheat a 6-quart pot and add 3 tablespoons of oil.

Add 2 pounds of ground beef and 1 pound of minced and chopped top sirloin steak to the pot and brown.

Season with 1 teaspoon and a half of salt and 1/2 teaspoon of cracked black pepper.

Cook the ground beef until browned, then add 4 to 5 cloves of minced garlic and 1 large chopped onion; cook for about 5 minutes on medium-high heat.

Add 6 tablespoons of chili powder, 3 teaspoons of smoked paprika, 3 teaspoons of granulated garlic powder, 3 teaspoons of granulated onion powder, and 3 teaspoons of ground cumin; mix well and cook for another 2 to 3 minutes.

Stir in 3 tablespoons of tomato paste and cook for a couple of minutes.

Add 7 cups of low sodium beef broth and 1 chopped chipotle pepper in adobo sauce along with 2 tablespoons of the adobo sauce; bring to a simmer.

After 1 hour, add a cornstarch slurry made from 4 heaping tablespoons of cornstarch mixed with 4 tablespoons of cold water; stir to thicken.

Add 2 drained and rinsed cans of pinto beans and continue simmering for another 15 to 20 minutes.
