Cottage Pie, traditionally made with beef, has roots in the UK dating back to the late 18th century when it was a way to use leftover meat. The dish is a comforting blend of savory meat and vegetables topped with creamy mashed potatoes, often enjoyed in homes across Britain. While variations exist, such as Shepherd's Pie which uses lamb, Cheesy Cottage Pie adds a delightful twist with melted cheese, making it a family favorite.

Preheat the oven to 375°F.
In a pan, heat cooking oil over medium to medium-high heat.
Add 1 pound of lean ground beef and 1/2 small onion, sautéing until browned.
Add a pinch of salt and pepper, then add 1/2 large shredded carrot and 1 clove of garlic, continuing to sauté.
Stir in fresh thyme (optional), 1 tablespoon of tomato paste, and 1 to 1.5 tablespoons of worcestershire sauce.
Sprinkle in 3 tablespoons of all-purpose flour and mix well.
Add 3/4 to 1 cup of beef broth to create a gravy, stirring until combined.
Transfer the meat mixture to a buttered baking dish.
Peel and cut 600 grams of russet potatoes into large chunks and boil with 1 clove of garlic until fork tender.
Drain the potatoes and mash with salt, pepper, butter, and 4 ounces of grated white cheddar cheese, adding cream as needed.
Spread the mashed potatoes over the meat mixture in the baking dish.
Top with remaining cheese and place in the preheated oven.
Bake uncovered for 25 to 30 minutes until bubbly and golden brown.
Let it set for 15 minutes before serving.
