How to Cook Salmon with Potato Scales

Remove the skin from the salmon fillet.

Top and tail the potatoes and peel them.

Use a mandolin to slice the potatoes thinly, about 2 potatoes to cover the fish.

Brush melted unsalted butter over the salmon fillet to help the potatoes stick.

Sprinkle a good pinch of salt over the salmon.

Overlap the potato slices on top of the salmon to resemble fish scales.

Add more melted butter on top of the potato scales and a pinch of salt.

Heat a good quality non-stick pan over medium heat.

Use a fish slice to lift the salmon and carefully place it in the pan with the potato side down.

Season the other side of the salmon with salt and add olive oil to the pan.

Cook the potatoes until golden brown, about 5 minutes.

Carefully turn the fish over using the fish slice, ensuring the potatoes are golden brown and not stuck to the pan.

Continue to cook the fish to your desired doneness.

Plate the dish and serve.
