Carefully carve and cut the ice block into a cube that can be placed into the serving glass. Place the cube into the glass.

To make the garnish, slice the Malta orange into roundels, skewer a toothpick over a slice.

Pour the whisky in a cocktail shaker, add simple syrup, lemon juice. Break in the egg in a small bowl and separate the egg whites from the yolk. Add 15ml egg whites into the shaker and shake it for a few seconds for the egg whites to foam. Add some ice cubes and shake again.

Pour the mixture into the prepared glass. Garnish with the orange. Serve immediately.
