In a mixing bowl, combine 2 1/2 cups flour, 1 tablespoon sugar, and 1 teaspoon salt.
Coat the flour with 3 tablespoons of vegetable oil.
Add 1 cup of unsalted butter cut into pieces and mix on low speed until the flour turns a buttery yellow color.
Add 1/4 cup cool water and 1 teaspoon white vinegar to the mixture.
Shape the dough into two rolls and chill for at least 2 hours.
Preheat the oven to 400°F.
Roll out the dough and cut circles using a 5-inch cookie cutter.
Curl the pastry edges to create a flower-like shape and chill while preparing the filling.
In a bowl, whisk together 3/4 cup brown sugar, 3/4 cup maple syrup, 1/2 cup melted butter, 2 eggs, 1 teaspoon vanilla, and 1 teaspoon white vinegar.
Ladle the filling into the pastry shells, leaving some space for the filling to rise.
Bake at 400°F for 10 minutes, then reduce the temperature to 375°F and bake for another 20 minutes.
Let cool and serve, optionally with vanilla ice cream and sprinkles.
