Heat a skillet over medium heat and add about 1 tablespoon of oil (olive or canola).
Chop 1 cup of onion (yellow or white) finely.
Chop 2-3 garlic cloves finely, using the flat side of a knife to smash them for easy peeling.
Add the chopped onion and garlic to the skillet and sauté for 4-5 minutes until softened but not browned.
Add 1.5 pounds of ground beef to the skillet and crumble it using a meat masher or spatula until fully cooked.
Drain excess grease from the ground beef using a method of tipping the skillet and soaking it up with paper towels.
In a glass measuring cup, mix together 2 tablespoons Worcestershire sauce, 3 tablespoons brown sugar, 0.5 cup ketchup, 1.5 tablespoons yellow mustard, 1 teaspoon kosher salt, and a couple dashes of black pepper.
Pour the sauce mixture over the cooked ground beef and stir to combine, letting it warm through to blend flavors.
Spoon the sloppy joe mixture onto brioche buns, adding dill pickle chips on top before closing the sandwich.
