Traditionally, it was a peasant dish, utilizing beets and seasonal vegetables, symbolizing sustenance and community. Today, borscht is celebrated worldwide, with variations that include meat or are served chilled in summer, showcasing its versatility and enduring popularity.
Heat some olive oil in a large pot over medium heat.
Add chopped onions and garlic; sauté until translucent.
Stir in diced potatoes and pre-boiled beetroot; cook for a few minutes.
Add shredded cabbage, chicken thighs, black peppercorns, allspice peppercorns, and bay leaves; mix well.
Incorporate cherry tomatoes and water or stock; bring to a boil.
Reduce heat and add salt; simmer until chicken is cooked and potatoes are tender.
Remove chicken skin if desired and shred chicken into the soup.
Adjust seasoning as needed before serving; serve hot, garnished with creme fraiche and fresh dill or parsley.
