3 Large Beets with Stems
½ Lb Pork Ribs
4 Potatoes
2 Carrots sliced
2 Celery Stems chopped
5 Mushrooms
2 Bay Leaves
2 Tbs White Vinegar
3 Tbs Fresh Dill
4 Tbs Green Parsley
¾ tsp Salt
½ tsp Black Pepper

Peel and grate the beets, then set aside.

Chop the potatoes and carrots into small pieces.

Chop the celery stems and slice the mushrooms.

In a large pot, add the pork ribs and cover with water, bringing to a boil.

Add the chopped vegetables (potatoes, carrots, celery, mushrooms) and bay leaves to the pot.

Stir in the grated beets and cook until all vegetables are tender.

Add white vinegar, salt, and black pepper to taste.
