Beet Hummus

1 can (15 oz) chickpeas
1/4 cup tahini
2 tbsp olive oil
1/4 cup lemon juice
2 cloves garlic, minced
2 medium beets, roasted and peeled
as needed ice water
4 oz crumbled feta cheese
1/4 cup freshly chopped parsley
as needed freshly chopped vegetables
as needed favorite bread

Add chickpeas to the bowl of a food processor.

Add tahini, olive oil, juice of one freshly squeezed lemon, and roughly chopped garlic cloves to the food processor.

Place the lid on the food processor and start pulsing all the ingredients together.

Scrape down the sides of the food processor with a rubber spatula.

Add roasted beets to the hummus and keep blending until smooth.

Use a rubber spatula to scrape down the sides of the food processor again.

Add ice water a little bit at a time, blending in between each addition until the desired consistency has been reached.

Transfer the lemon beet hummus to a serving bowl and spread it out.

Drizzle with some more olive oil and garnish with crumbled feta cheese and freshly chopped parsley.

Serve with freshly chopped vegetables and your favorite bread.
