Kefir Cinnamon Buns

Kefir cinnamon buns are a delightful treat from Russia, where kefir is a staple fermented dairy product. These buns embody the warmth of Russian baking traditions, often enjoyed with tea or coffee. Today, they have gained popularity beyond Russia, appealing to those who appreciate the unique tanginess of kefir in baked goods.

In a bowl, add yogurt.
Add melted butter, a pinch of salt, and sugar to the yogurt and stir.
Sift the flour and baking soda together.
Add the baking soda along with the flour to the bowl and mix well with a spatula.
Knead the dough with hands until it is soft and slightly sticky, being careful not to add too much flour.
Let the dough rest for a couple of minutes.
Prepare the filling by mixing cane sugar, cinnamon, and one teaspoon of starch in a bowl.
Sprinkle the table with flour and roll out the dough into a thin rectangular layer, about 3-4 mm thick, 38 cm long and 30 cm wide.
Grease the top of the rolled dough with soft butter and spread the sugar and cinnamon mixture evenly on top.
Cut the dough in half lengthwise, then cut into thin strips approximately 1 cm thick.
Roll each strip into mini Cinnabons and place them on a baking sheet lined with parchment paper, leaving space between each roll.
Brush the tops of the rolls with a mixture of egg yolk and milk.
Preheat the oven to 180°C and bake for about 8-10 minutes until lightly browned, avoiding overcooking.
Transfer the baked buns to a plate and prepare a glaze by mixing powdered sugar with milk to desired thickness.
Drizzle the glaze over the buns.
