Porterhouse Steak with Garlic & Herb Infused Butter

Sirloin is leaner and flank is more affordable.
Remove the steak from the refrigerator and let it come to room temperature for 30 minutes.
Preheat the grill or skillet over high heat until very hot.
Season the steak generously with salt and black pepper on both sides.
Add olive oil to the grill or skillet and coat the surface evenly.
Place the steak on the grill or skillet and cook for 4-5 minutes without moving it.
Flip the steak and cook for another 4-5 minutes for medium-rare, or until desired doneness.
While the steak is cooking, combine softened butter, minced garlic, chopped parsley, thyme, rosemary, and lemon juice in a bowl.
Mix the herb-infused butter until well combined and set aside.
Once cooked, remove the steak from the heat and let it rest for 5-10 minutes.
Slice the steak against the grain and serve with a dollop of garlic herb butter on top.
