Fish Congee

1 C rice, washed and frozen
¾ lb. fresh or frozen fish fillet (black cod or any white fish), cut into chunks
¼ t salt
¼ t white pepper
2 t oyster sauce
2 t Chinese wine
1 T ginger, minced
1 egg white
8-10 C water
1 T chicken or mushroom powder
5-6 ginger thinly sliced
1 sprig spring onions, finely chopped
1 small bunch cilantro, chopped
Splash of fish sauce to taste
Optional: 1-2 century egg, chopped

Cook the rice by boiling 8-10 cups of water in a pot.

Add 1 cup of washed and frozen rice to the boiling water.

Stir in 1 tablespoon of chicken or mushroom powder and 5-6 slices of ginger.

Simmer until the rice is velvety and cooked through, adding more water if necessary.

Prepare the fish fillet by marinating it with ¼ teaspoon of salt, ¼ teaspoon of white pepper, 2 teaspoons of oyster sauce, 2 teaspoons of Chinese wine, 1 tablespoon of minced ginger, and 1 egg white.

Cook the marinated fish fillet in the congee until it is fully cooked and flakes easily.

Add chopped spring onions, cilantro, and a splash of fish sauce to taste before serving.
