Fish Congee

1 cup jasmine rice
6 cups water
200g white fish fillets (e.g., cod or tilapia)
1 inch ginger, sliced
2 green onions, chopped
1 tbsp soy sauce
1 tsp sesame oil

Rinse the jasmine rice under cold water until the water runs clear.

In a large pot, combine the rinsed rice and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low and simmer for about 30 minutes, stirring occasionally, until the rice breaks down and the mixture becomes creamy.

Add the sliced ginger and fish fillets to the pot. Cook for an additional 10-15 minutes, or until the fish is cooked through and flakes easily.

Remove the ginger slices from the congee and discard them.

Stir in the soy sauce, sesame oil, salt, and white pepper to taste.
