Heat olive oil in a pan over medium-high heat.

Add 500 g of ground beef to the pan, breaking it apart and browning it for about 10 minutes until golden and water has evaporated.

Transfer the browned beef to a plate and set aside.

Slice a large red bell pepper, remove the seeds, and dice it into small chunks.

Dice 1.5 medium-sized onions fairly fine and add to a container.

Chop a large chili, removing the seeds, and test its heat by rubbing your finger along the membrane.

Chop 2 cloves of garlic finely and add to the container with the other vegetables.

In the same pan, add more olive oil and sweat the diced vegetables for about 5 minutes until the onions are soft.

Add 2 tablespoons of tomato puree, 1 teaspoon of ground cumin, 1 teaspoon of dried oregano, and 1.5 teaspoons of smoked paprika to the pan and cook for 2 minutes to avoid bitterness.

Return the browned beef to the pan along with chopped tomatoes and beef stock, stirring to combine.

Simmer the mixture for about 45 minutes to 1 hour until thick and glossy.

After simmering, add kidney beans, salt, and pepper to taste, and a couple of squares of dark chocolate, stirring to combine.

Let it warm through for another 5 minutes before serving.
