White Chicken Chili

2 medium yellow onions
2 jalapenos
1 rotisserie chicken
4-5 cans Great Northern beans
2 (4-ounce) cans green chilies
2 teaspoons ground cumin
black pepper
1 teaspoon chili powder
1 tablespoon chicken base
8 cups water

Chop 2 medium yellow onions and set aside.

Chop 2 jalapenos; remove seeds from one for the chili and keep seeds in the other for garnish.

Shred rotisserie chicken from Sam's Club.

Add oil to a pan and sauté the onions and jalapeno until softened.

Rinse and add 4-5 cans of Great Northern beans to the pot.

Add 2 (4-ounce) cans of green chilies to the pot.

Add shredded chicken to the pot.

Season with 2 teaspoons of ground cumin, black pepper, and 1 teaspoon of chili powder.

Add 1 tablespoon of chicken base or chicken broth.

Pour in 8 cups of water and simmer until hot.

Smash a few beans against the side of the pot to thicken the chili.

Adjust seasoning to taste, adding ground coriander if desired.

Garnish with fresh cilantro and the sliced jalapeno.
