Slice a 1 lb flank steak into 2 to 3 inch wide sections with the grain, then slice against the grain into thin pieces.

Coat the beef strips with 1 teaspoon of sugar, 2 teaspoons of cornstarch, 2 teaspoons of vegetable oil, 2 teaspoons of soy sauce, and 1 teaspoon of shaing cooking wine. Toss to coat and marinate for 30 minutes.

Cut a white onion in half and slice it into thin pieces.

Thinly slice 2 cloves of garlic.

Peel and slice 1 inch of ginger into thin pieces.

Cut the white parts away from the green on a fresh bunch of scallions and slice the green parts into 1 to 2 inch pieces.

Heat 1 and 1/2 tablespoons of vegetable oil in a wok or large sauté pan over medium-high heat.

Add the marinated beef and sear for 30 to 45 seconds undisturbed, then flip and stir until cooked. Remove from the pan.

Add another tablespoon of vegetable oil to the wok, followed by the sliced onion. Stir fry for 30 seconds.

Add the minced ginger and sliced garlic and stir for 10 seconds until fragrant.

Add 1 lb of fresh rice noodles to the wok.

Pour in 2 and 1/2 tablespoons of soy sauce, 1 and 1/2 tablespoons of oyster sauce, 1 teaspoon of shaing cooking wine, and 1/4 teaspoon of sugar. Toss the noodles to coat in the sauce.

Add the beef back to the pan along with all the juices, 12 oz of bean sprouts, and the chopped scallions. Toss gently until everything is heated through and combined.
