Marinate thin slices of flank steak with 1 tbsp of soy sauce, 1 teaspoon of oil, 1/4 teaspoon of baking soda, 1 tbsp of Shing wine, 1 egg white, and 1 tbsp of cornstarch for 30 minutes to tenderize the beef.

Combine 1 cup of rice flour, 1/2 cup of tapioca starch, and 1 and 1/2 cups of water, mixing until smooth to make fresh rice noodles.

Oil the bottom of a nonstick pan and add enough batter to barely coat the bottom.

Make a steamer using a large pan filled with water and a trivet, place the nonstick pan in the steamer, cover with a lid, and let it steam for 4 minutes.

For the sauce, combine 2 tablespoons of soy sauce, 1 tbsp of dark soy sauce, 1 tbsp of oyster sauce, 1 tbsp of water, 1 tbsp of sugar, and a few dashes of white pepper.

Add 1 tablespoon of oil to a pan over high heat and sauté the marinated beef until browned and fully cooked, then remove it from the pan.

Add 1 tbsp of minced ginger and 3 cloves of minced garlic to the pan and sauté for 1 minute.

Return the beef and flat rice noodles to the pan, pour over the prepared sauce, and add 1 teaspoon of toasted sesame oil, sautéing together on high heat.
