1 1/2 tsp salt
1/2 tsp turmeric powder
2 tsp coriander powder
whole garam masalas (2 pieces mace, 1 star anise, 4 cloves, 10-12 black peppercorns, 1 big cardamom, 2 cinnamon sticks, 1 tsp cumin seeds)
4 medium potatoes
3-4 green chilies
3-4 green cardamoms

Heat 1/2 cup of cooking oil in a pan until hot.

Add 3 finely sliced medium onions and fry on medium to high flame until light golden brown, about 5-6 minutes.

Remove the fried onions and let them cool to become crispy.

In a mixer jar, add 1 cup of yogurt and the cooled fried onions, then blend until smooth.

Grind the whole garam masalas: 2 pieces of mace, 1 star anise, 4 cloves, 10-12 black peppercorns, 1 big cardamom, 2 cinnamon sticks, and 1 tsp cumin seeds.

In the same pan, add 1/3 cup of oil and then add 700 grams of mutton, frying for 2-3 minutes until its color changes.

Add 1 1/2 tbsp garlic ginger paste to the mutton and fry for 5-6 minutes on medium to high flame until the water evaporates and the mutton is browned.

Add 1 tsp red chili powder, 1 1/2 tsp salt, 1/2 tsp turmeric powder, and 2 tsp coriander powder to the mutton, mixing well.

Add the ground garam masala and a little water to help roast the spices, frying for another 3-4 minutes.

Add the yogurt and onion paste to the mutton, along with some water to clean the bowl, and fry until the oil separates, about 4-5 minutes.

Add enough water to cover the meat and simmer on low flame for 30-35 minutes until the mutton is 90% cooked.

Cut 4 medium potatoes into halves and add them to the pot, cooking for another 10-12 minutes until the potatoes are tender.

Check the meat and potatoes for doneness; they should be soft and tender.

Add 3-4 green chilies and 3-4 green cardamoms for flavor, cooking for an additional 1-2 minutes.

Finish by adding finely chopped fresh cilantro and mix well.
