Tandoori Cauliflower

½ cup crème fraîche
2 Tbsp tomato paste
1 Tbsp water
1 tsp ground cumin
1 tsp ground turmeric
1 tsp garam masala
1 tsp smoked paprika
1 tsp kosher salt
1 medium head cauliflower
¼ cup pine nuts
1 cup low-salt vegetable broth
¼ cup golden raisins
2 Tbsp chopped fresh cilantro

Preheat the oven to 425°F (220°C).

In a large bowl, combine the yogurt, tandoori masala, lemon juice, olive oil, garlic powder, ginger powder, salt, black pepper, and cayenne pepper (if using).

Add the cauliflower florets to the bowl and toss until they are well coated with the marinade.

Let the cauliflower marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

Spread the marinated cauliflower florets in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and slightly charred, flipping halfway through.

Remove from the oven and let cool for a few minutes.
