Jerk Pot Roast combines this vibrant flavor profile with the comforting nature of a slow-cooked roast, making it a popular dish for gatherings and family meals. Welcome to Food Connection and introduce the recipe as jerk pot roast.

2

Use Walkers Wood jerk seasoning, specifically the mild version.

3

Prepare ingredients: thyme, garlic, scallion, allspice, and homemade green seasoning.

4

Use Maggie seasoning and salt and pepper to season the roast.

5

Generously season the roast with salt, Maggie all-purpose seasoning, garlic, scallion, allspice, black pepper, and about 3 tablespoons of jerk seasoning.

6

Rub the seasoning into the roast and poke it with a knife to allow the seasoning to penetrate.

7

Let the roast sit for at least an hour, preferably overnight, to soak in the seasoning.

8

Heat a cast iron skillet and add cooking oil until hot.

9

Add the roast to the skillet and sear for about 5-8 minutes, flipping to achieve a nice char.

10

Transfer the roast to a roasting pan and add sliced onions, fresh thyme, additional jerk seasoning, and fresh chopped garlic.

11

Add a few slices of unsalted butter on top of the roast.

12

Pour in beef broth and cover the pan.

13

Place the pan in the oven preheated to 350°F and roast for about 2 hours.

14

Check the roast after 2 hours to see how it’s looking and then add potatoes and baby carrots.

15

Mix the gravy mix with 2 cups of cold water according to package instructions and pour it over the roast.

16

Return the roast to the oven for another hour to an hour and a half.

17

After about 3 hours total, check the roast; it should be tender.

18

Plate the roast and serve with creamy mashed potatoes.
