Portuguese Style Roast Chicken

1 whole chicken (about 4-5 lbs)
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp smoked paprika
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 lemon, juiced
1/2 cup white wine
1 onion, quartered
2 cups baby potatoes, halved
1 cup carrots, chopped

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the olive oil, minced garlic, smoked paprika, oregano, salt, black pepper, and lemon juice to create a marinade.

Rub the marinade all over the chicken, making sure to get under the skin for maximum flavor.

Place the quartered onion inside the cavity of the chicken.

In a roasting pan, arrange the baby potatoes and carrots around the chicken.
