With their crispy exterior and soft, chewy interior, they have become a favorite among both kids and adults, and variations can be found in bakeries across the country.

Coconut sugar is less processed but can be more expensive.
Add 1.5 cups of water and 0.25 cup of sugar to a microwavable safe bowl.
Microwave for about 45 seconds to heat the water.
Stir until the sugar is mostly dissolved and check that the water is not too hot.
Add 1 packet of yeast (or 2.25 teaspoons) to the water and sugar mixture and mix.
Wait for the yeast to bloom.
In a mixing bowl, add bread flour and 1 teaspoon of salt, mixing well to combine.
Make a well in the center of the flour mixture and add the bloomed yeast mixture and 4 tablespoons of melted butter.
Mix on medium low speed for 7-10 minutes using a dough hook, or knead by hand for about 15 minutes until smooth.
Brush the dough with about 1 tablespoon of oil, coating it well to prevent sticking.
Cover the bowl with a towel and place in a warm area until doubled in size (may take longer with distractions).
Prepare a cinnamon sugar mixture by mixing equal parts brown sugar and granulated sugar with a pinch of cinnamon.
Punch down the risen dough and flatten it out.
Form the dough into a log and separate into pieces for bagels (8 normal, 6 jumbo, or 10 mini).
Take one piece of dough, tuck the ends into the center, and seal it by rolling it on the counter.
Create a hole in the center of the dough with your finger and spin it to form a bagel, ensuring the hole is about 3 inches in diameter.
Let the formed bagels rest for 15-20 minutes, covered with a damp towel.
In a large pot, bring 6-8 cups of water to a slow boil and add 1 tablespoon of baking soda, stirring to combine.
Boil each bagel for 1 minute on each side (2 minutes total), using a slotted spoon to flip them.
Place boiled bagels on a parchment-lined baking tray and sprinkle with desired toppings.
