Add 1/4 cup shelled pistachios to a chopper cup and blend on high until finely chopped.
Add 1/4 cup maple syrup, 2 tablespoons cashew butter, 1 tablespoon tahini, 1 tablespoon coconut oil, 1/2 teaspoon vanilla extract, and a pinch of salt to the chopped pistachios and blend until smooth.
Place 2 cups of corn checks or rice checks in a plastic bag and crush them with your hands.
Dump the crushed cereal into a mixing bowl.
Pour the blended mixture over the crushed cereal and mix until fully incorporated, using a spatula to mash it down.
Line a 4x8 bread pan with parchment paper, scoring the corners for neatness, and press the parchment up over the sides.
Transfer the mixture into the lined bread pan and press down evenly, using a second bread pan for more leverage if needed.
Melt 1/3 cup chocolate chips with 2 teaspoons coconut oil in the microwave in two 30-second intervals, stirring in between until smooth.
Melt 1 tablespoon white chocolate chips with 1/2 teaspoon coconut oil in the microwave using the same method.
Add 1/4 teaspoon spirulina powder and a few dashes of orange turmeric to the melted white chocolate and mix until well combined.
Pour the melted chocolate over the pressed mixture in the bread pan and spread it evenly with a spatula.
Tap the pan on the counter to help the chocolate settle into the crevices.
Drizzle the green white chocolate over the top in a diagonal pattern.
Sprinkle additional chopped pistachios and a tiny bit of coarse sea salt on top if desired.
Let the bars set in the fridge or freezer until solid, about 15 to 20 minutes in the freezer.
Once solid, cut the bars into thirds for serving.
