Bánh mì is a popular Vietnamese street food that reflects the country's colonial history, combining French and Vietnamese culinary traditions. The sandwich typically features a crispy baguette filled with various meats, vegetables, and condiments, making it a versatile and flavorful meal option.

Preheat your oven to its lowest temperature (about 86°F/30°C) and place a baking dish with boiling water in the bottom to create humidity.
Combine all ingredients in a stand mixer fitted with a dough hook: water, bread flour, bread improver, instant dry yeast, sugar, and vitamin C.
Knead on speed 2 for about one minute, then add salt and increase speed to 8, kneading for another 7-8 minutes until the dough is silky smooth and slightly sticky.
Divide the dough into six pieces, each weighing approximately 3.5 ounces (100g).
Shape each piece into a long, thin trapezoid and roll into a log, placing each log into a greased baguette pan.
Proof the baguettes in the preheated oven until they have almost quadrupled in size, about 1.5 to 2 hours.
Preheat the oven to 400°F (200°C) and place an iron skillet or pan filled with lava rocks at the bottom to create steam.
Score each baguette with a razor blade at a 45-degree angle.
Generously spray the baguettes with water.
Pour boiling water into the iron skillet or pan to create steam, then add the baguette pans to the oven and bake for 7-8 minutes.
Remove the skillet or pan and bake the baguettes for another 4-5 minutes until golden brown.
Remove from the oven and let cool, brushing with melted vegan butter for shine.
