Mince 4 cloves of garlic and prepare 4 slices of ginger.

Cut 4 green onions into 2-inch sections, keeping the stem and leafy parts separate.

Marinate the beef with soy sauce, dark soy sauce, water, a little sugar, white pepper powder, baking soda, and cornstarch. Mix thoroughly and add a touch of sesame oil.

Prepare a cornstarch and water mixture by mixing cornstarch with cold water until dissolved.

Heat oil in a pan over medium-high heat. When hot, add the tofu and pan fry until the bottom is golden brown, about 3 minutes. Turn the tofu to fry the other side until golden brown, seasoning lightly with salt.

Remove the tofu from the pan after both sides are golden brown and add a touch of soy sauce to flavor it briefly before removing.
