Roughly chop 1 large onion and 2 garlic cloves.

Pat the beef cubes dry and season with salt and freshly ground black pepper.

Place a large low pot over high heat and add 2 tablespoons of olive oil.

Add the beef cubes to the pan one by one and brown for several minutes on all sides, avoiding overcrowding the pan.

Remove the browned beef to a plate and set aside.
