1 finely diced brown onion
500 g beef mince
2 tablespoons barbecue rub
1/2 cup ketchup
1/4 cup yellow American-style mustard
2 tablespoons Worcestershire sauce
1/2 cup brown sugar
shredded high melt cheese (cheddar or tasty)

Heat a large pan and add a splash of olive oil.

Add the finely diced brown onion and cook until softened, about 5 minutes.

Add 500 g of beef mince to the pan and break it apart as it browns.

Season the beef with 2 tablespoons of your favorite barbecue rub.

Once the beef is browned, reduce the heat to low and add 1/2 cup of ketchup, 1/4 cup of yellow American-style mustard, 2 tablespoons of Worcestershire sauce, and 1/2 cup of brown sugar.

Stir the mixture until thickened, then remove from heat.

Preheat the Z Grills pellet smoker to 200° C.

Line the mini corn dogs on a wire rack and place them in the smoker. Close the lid and cook for 20 minutes.

After 20 minutes, remove the corn dogs from the smoker and slice them down the middle without cutting all the way through.

Open the corn dogs and stuff them with the meat mixture, then top with shredded high melt cheese.

Return the stuffed corn dogs to the smoker for about 5 minutes to melt the cheese.

Once the cheese is melted, remove the corn dogs from the smoker and top each with a few pickle slices.
