1 whole chicken
2 tbsp palm sugar
1/4 cup fish sauce
200g rice noodles
2 spring onions
1 cup Thai basil leaves
1 lime
1 red chili
1 tbsp red chili sauce
1 tbsp chili paste
1 tbsp light soy sauce

Prepare the broth by roasting the onion and ginger until fragrant.

Add the chicken, cinnamon stick, star anise, palm sugar, and fish sauce to a pot of water.

Bring to a boil and then simmer for about 30-40 minutes until the chicken is cooked through.
