Caramelized Orange Pork Loin

1 x 2 lb pork loin
4 cups warm milk
salt
10 peppercorns
2 cinnamon sticks
zest from 1 orange
sugar
vegetable oil
5 potatoes, sliced
1 zucchini, chopped
2 tomatoes, halved
10 mushrooms, halved
4 scallions
½ stick butter
⅓ cup veggie broth
salt & pepper

Sear the pork loin on all sides, then pour in the warm milk and spices. Bring everything to a simmer and let it cook for 45 minutes.

Heat some sugar and water together in a pan and bring the mixture to a boil until the sugar caramelizes. Pour the caramel mixture into the pan with the pork roast and let everything cook for 10 more minutes.

Take out the pork, making sure to keep it warm, and let the sauce thicken.

Prepare the veggies and their baking paper container as seen in the video.

Add in the butter and veggie broth, then transfer the veggies to the oven and bake at 400°F for 25–30 minutes.

Serve the pork loin together with the roasted veggies, and pour the caramelized orange sauce on top.
