Lebanese Fattoush Salad

Originating from Lebanon, Fattoush salad is a vibrant dish that reflects the region's agricultural abundance. Traditionally made with leftover pita bread, it symbolizes resourcefulness and the use of seasonal vegetables. Fattoush is often served as part of a mezze platter and has gained popularity worldwide, inspiring variations that include different greens or dressings.

Preheat oven to 300 degrees.
Separate the pitas and spread the oil mix on them.
Cut the pitas into small pieces with kitchen scissors.
Line the pita pieces on a tray and bake for 5 minutes per side.
Chop the romaine lettuce into fairly large pieces.
Cut the red pepper into large pieces.
Slice the radishes fairly thin.
Slice the cucumbers into half moons and keep them fairly large.
Chop the cherry tomatoes into quarters or halves depending on size.
Slice the red onion as preferred.
Remove the stalks from the parsley and finely chop the leaves.
Squeeze the juice from the lemons into a small blender.
Add 1/4 cup of olive oil, 2 cloves of garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper to the blender and whisk until blended.
Assemble the salad by tossing all the chopped vegetables together in a large bowl.
Add the pita chips to the salad and sprinkle with sumac.
Pour the dressing over the salad and toss to combine.
