In a large bowl, mix together 2 pounds of 80/20 ground beef, 1 grated onion, 1/4 cup finely diced parsley, 1 tablespoon ginger, 1 tablespoon garlic, 1/2 teaspoon sesame oil, and 1 tablespoon low sodium soy sauce.
Add 1 tablespoon original and hot all-purpose seasoning, a pinch of red chili flakes, a pinch of chili powder, 2.5 ounces of Boars and cheese, and 2 tablespoons sour cream to the mixture.
Add 2 beaten eggs and bread crumbs to the mixture and mix everything together until well combined.
Chill the mixture in the fridge for a bit, then use an ice cream scooper to form meatballs about 1.5 ounces each and place them on parchment paper.
Heat a skillet and add 1 tablespoon of avocado oil, then sear the meatballs on all sides until they have a nice crust.
Transfer the seared meatballs to the oven at 375°F until they reach an internal temperature of 165°F.
In the same skillet, melt 2 tablespoons of butter, then add 1/2 cup low sodium soy sauce and 1/4 cup brown sugar, stirring until the sugar dissolves.
Add 3 tablespoons of Hoisin sauce, 1 tablespoon each of garlic and ginger paste, a few dashes of sesame oil, and 1/4 cup honey to the sauce and mix well.
Allow the sauce to simmer until it thickens, then add the meatballs back to the pot and coat them in the sauce.
Plate the meatballs and garnish with toasted sesame seeds and diced chives.
