Dice the onions quite small.
Chop the carrots and slice the garlic.
Remove seeds from the chili and chop it for heat.

Add diced onion to the pan, followed by carrots and garlic; sauté until caramelized.
Add chopped chili and spices: smoked paprika, cumin, and chili flakes; cook for about a minute to release flavors.
Brown the tomato paste in the pan to improve flavor and color.
Deglaze the pan with white wine, reducing it slightly.
Add soaked cannellini beans and chopped tomatoes to the mixture.
Cover with chicken stock and bring to a boil, then reduce to a simmer for about 45 minutes.
Add the sausages back into the pot during the last cooking stage.
After cooking, garnish with fresh parsley before serving.
