1 1/2 pounds ground beef (96% or 85/15)
20 crackers, crushed
1 finely chopped onion
1/4 cup finely chopped green bell pepper
1 large egg
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon ground black pepper
1/3 cup ketchup
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1 jar Heinz Homestyle Mushroom Gravy
2 packages Onion Gravy mix
1/2 tablespoon Black pepper
1/2 tablespoon all-purpose seasoning
1/2 cup or more Beef broth
1 small Onion, sliced

Add olive oil, onions, bell peppers in a cast iron skillet over medium high heat until the veggies are softened and removed and set aside.

In a large bowl, add your meatloaf ingredients and mix everything together. Add your green peppers and onions to the mixture and try not to overmix your mixture.

Pack the meat mixture into the loaf pan or shape it and place it on the baking pan or cast iron skillet.

Bake the meatloaf for 1 hour at 350°F or use a meat thermometer and test your internal temperature to 170° to 180° internally. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).

Add your gravy mixture into a saucepan and cook over medium-high heat, add more beef broth if needed for thickness of the gravy.

Remove your meatloaf from the oven once done. Cut into thick slices and serve with mashed potatoes and spread gravy right on top.
