Boil 900 g of water in a pot.

Add 125 g of dry sorrel leaves and 2 pieces of ginger to the boiling water.

Add 4 cloves to the pot.

Crush the ginger and add it to the pot.

Cover and simmer for about 15 minutes.

Add a pinch of cinnamon to the mixture.

Strain the mixture to remove solids.

Add 1 cup of brown sugar and stir until dissolved.

Add 3 tablespoons of white rum to the strained liquid.

Taste and adjust sweetness if necessary.

Chill in the refrigerator for at least 30 minutes before serving.

Serve over ice.
