Boil 10 cups of water in a large pot.

Add 2 pounds of sorrel petals and 1/4 cup of pounded ginger to the boiling water.

Add cinnamon sticks and 1 tablespoon of cloves to the pot.

Cover and allow to boil for about 5 minutes to extract flavors from the spices.

Add the sorrel petals to the pot and boil for about 3 minutes on high heat.

Turn off the stove and cover the pot to allow the mixture to steep, ideally overnight for about 12 hours.
