Sift through the sorrel petals to remove debris.

Wash the ginger and grate about 1 cup of it.

Boil 10 cups of water with 5 cloves, 10 pimento berries, 1 cinnamon stick, and 1 orange peel.

Once boiling, remove the orange peel and add the grated ginger.

Cook for about 5 minutes, then add the sorrel petals and stir.

After 5 minutes, remove from heat and strain into a separate pot.

Cover and allow to steep for about 2 days.

After steeping, strain the mixture again and add 2 cups of cooled water.

Sweeten to taste with 1.5 to 2 cups of brown sugar.

For the non-alcoholic version, store in sanitized containers and add uncooked white rice for preservation.
