Cut 1 kg of stewing beef into 1-inch cubes and dust with 2 tablespoons of flour.
Season beef with salt and black pepper.
Sear beef in a hot pot for about 8 minutes until browned, then remove and set aside.
In the same pot, add 3/4 cup of butter and turn heat to medium.
Add 2 diced yellow onions, 3 diced carrots, and 2 diced stalks of celery to the pot, season with salt and pepper, and stir.
Cook vegetables until they release moisture and start to brown.
Chop 4 cloves of garlic and add to the pot, stirring to combine.
Add 1 tablespoon of tomato paste, 1 tablespoon of Worcestershire sauce, and 1 tablespoon of brown sugar to the pot, stirring to combine.
Add 2 teaspoons of chopped thyme and stir.
Add 2 tablespoons of flour to thicken the mixture, stirring to combine and cook for a few seconds.
Return the seared beef to the pot and add 1.5 cups of beer and 2 cups of beef stock, stirring to combine.
Bring the mixture to a boil, then cover and transfer to a 325°F oven for about 1.5 hours until the beef is tender.
Prepare a hot water crust pastry by boiling 3/4 cup of butter and 3/4 cup of water together.
