Rinse the mung beans and soak for 6 to 12 hours in cold water.
After soaking, drain the water and rinse the beans with cold water again.
Place the beans in a cheesecloth or sprouting jar and keep in a cool dry dark place to sprout.
After about 12 hours, the mung beans will be sprouted well; you can sprout longer if desired.
In a large bowl, add finely chopped onion, tomato, cucumber, shredded carrot, and lettuce.
Add the sprouted mung beans to the bowl with the chopped vegetables.
Season the salad with a little bit of salt, red chili powder, and ground cumin.
Sprinkle chopped coriander leaves and add lime juice to the salad.
Mix all the ingredients thoroughly until well combined.
