Avocado oil has a higher smoke point.

Start with 2 pounds of eye of round, frozen.

Use a meat slicer set to cut level five to slice the meat into thin strips.

Place the meat slices onto the dehydrator tray.

Sprinkle Redman smoked salt on each chip, using about three to four turns per chip.

Set the dehydrator to 145°F (63°C) for 24 hours.

Check the meat after 12 to 14 hours, but let it dehydrate for the full 24 hours for best results.

Once done, the chips should be fully dehydrated and resemble potato chips.

The final yield will be about 11 oz of chips from the original 2 pounds of meat.
