Rinse 16 oz of plain white rice to remove starch.
In a pot, combine rinsed rice with 4 cups of water, 3 bay leaves, 1 teaspoon of salt, and 1 tablespoon of chicken bouillon.
Cook the rice until done, then cool it down and refrigerate.
Prepare the ingredients: chop green onions, celery, green bell pepper, onion, and garlic.
Dice the Cajun sausage and set aside.
Heat the griddle and add ground beef and Cajun sausage; brown the meat completely.
Add diced celery, onion, green bell pepper, and half of the green onions; sauté until tender.
Add garlic and cook briefly to avoid burning.
Incorporate chicken livers into the mixture.
Pour in warmed chicken stock to keep the dish moist.
Add 2 tablespoons of flour and mix well to combine.
Add Cajun seasoning, thyme, oregano, red pepper, and remaining green onions; stir to combine everything thoroughly.
Mix in the cooled rice, ensuring it absorbs the flavors and becomes moist.
Taste and adjust seasoning if necessary, adding hot sauce if desired.
