Fresh thick Coconut Milk – 1 Cup
Rice – 2 Cups
Ghee for roasting Cashews – 1 tsp
Ghee – 2 tbsp
Onion Sliced – 1 Medium
Ginger Garlic Paste – 2 tbsp
Cashew Nuts – ½ handful
Curry leaves Chopped – 2 stems
Cumin Seeds – 1 tsp
Hing – ¼ tsp
Green Chillies – 5

Soak rice for at least 30 mins.

In a pan, heat ghee and roast the cashew nuts until golden brown.

Add sliced onion and sauté until translucent.

Stir in ginger garlic paste and cook briefly.

Add cumin seeds, hing, and chopped curry leaves, and sauté for a minute.

Add the soaked rice and stir well to coat with the spices.

Pour in the coconut milk and bring to a boil.

Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed.
