Slice 350 g extra firm tofu in steaks, bites or strips then pat dry with paper towel.

Coat in 3 tbsp cornstarch and optional salt and pepper, making sure all sides are coated evenly.

Heat 2 tbsp vegetable oil in a large wok or frying pan over medium high heat. Add the tofu and stir fry for around 3 minutes per side. Quickly sear the edges if you like.

Once the tofu is lightly browned, pour in the 1/2 cup teriyaki sauce. It will start to thicken and cling to the tofu almost immediately, so use a spatula to flip and coat each piece evenly. Once the sauce has reduced (around 30 secs โ€“ 1 minute) switch off the heat.

Transfer to a plate or bowl and garnish with anything from spring onion / green onion, ginger, furikake or shichimi togarashi.
