Preheat a cast iron skillet and add olive oil.

Cube the pork tenderloin and sauté it in the skillet with salt, black pepper, and paprika until almost cooked.

Prepare a clay or stone baking pan by adding olive oil and spreading it with a brush.

Transfer the sautéed pork into the baking pan.

In the same skillet, add more olive oil and sauté chopped onions and minced garlic until fragrant.
