Remove the bone-in pork chops from the package and rinse them thoroughly to remove any bone shards.

Dab the pork chops with a paper towel to dry them off slightly.

Lay the pork chops back out and apply the Trauma Hall's SPG rub as the first layer of seasoning.

Apply the Smoke and Brothers Butt the Kitchen Sink rub on top of the SPG rub, pressing the rub down into the meat instead of rubbing it in.

Preheat the grill to 180°F and place the pork chops on it to start the smoking process.

Increase the grill temperature to 250°F and check the internal temperature of the pork chops, aiming for around 120°F.

Once the pork chops reach 120°F, sauce them with Adam's Apple barbecue sauce.

Continue cooking until the internal temperature reaches about 140°F, then wrap the pork chops tightly in foil and let them sit for about 10 minutes.
