1

Preheat a stock pot and add about 2 tablespoons of olive oil.

2

Season pork short ribs with salt and black pepper.

3

Brown the pork short ribs in the hot oil, flipping until both sides are nicely browned.

4

Remove the browned short ribs and set aside, leaving the pot on medium-high heat.

5

Add chopped onion, celery, and carrots to the pot; sauté until softened for several minutes.

6

Add chopped garlic and stir for a minute to prevent burning.

7

Pour in a whole bottle of Guinness stout and stir to deglaze the pot, picking up brown bits.

8

Add about 1.5 cups of beef broth to the pot.

9

Make a slurry with a small amount of flour and a bit of beef broth, then whisk to combine and add to the pot to thicken the sauce.

10

Add about a tablespoon of tomato paste to the mixture.

11

Season with thyme and add a bay leaf.

12

Return the short ribs to the pot, cover, and bring to a boil.

13
