Preheat the oven to 350°F (175°C).
Melt butter in a saucepan over low heat.
Toss shredded phyllo dough with melted butter until evenly coated.
Spread half of the dough in a greased baking dish, pressing down firmly.
Chop walnuts and almonds and mix with cinnamon, then sprinkle over the dough.
Top with the remaining dough, pressing down gently.
Bake until golden brown, about 30-35 minutes.
While baking, combine sugar, water, and lemon juice in a saucepan.
Bring syrup to a boil, then reduce heat and simmer for 10 minutes.
Remove from heat and add rose water and vanilla extract.
Pour syrup over the hot kadayıf immediately after baking.
Let cool for at least 30 minutes before serving.
