700g sugar
2 tbsp salt
500ml vinegar (white or apple cider vinegar)
some cucumbers (small to medium)
Whole black peppercorns
Allspice berries
Mustard seeds
0.5 tsp curry spice mix per jar

In a large pot, combine water, sugar, and salt. Stir well and bring to a boil.

Once boiling, add vinegar and return to heat until it comes to a full boil again.

In each clean jar, place a few peppercorns, allspice berries, and mustard seeds.

Cut cucumbers lengthwise into thin slices (or however you prefer) and tightly pack them into the jars.

Add ½ teaspoon of your favorite curry spice mix to each jar.

Pour the hot brine over the cucumbers, ensuring they are fully submerged. Seal the jars tightly.

Place jars in a preheated oven at 125°C (257°F) for 25 minutes. Carefully remove and flip them upside down on a towel. Cover with a cloth and let cool completely.

Let the jars rest for at least 2 months (but ideally 6 months) before opening for best flavor.
